Cajun Shrimp Skewers
Ingredients:
• 500g shrimp (peeled and deveined) – frozen will work.
• 1 tbsp baking soda (for thawing)
• 2 - 3 tbsp Slap Ya Mama Cajun Seasoning (adjust to taste)
• 1 tbsp olive oil
• 1 lemon (cut into wedges)
Serves 3 to 4 people.
Instructions:
1. Thaw the Shrimp:
• Place the frozen shrimp in a large bowl of cold water and add 1 tablespoon of baking soda. Let the shrimp thaw for 20-30 minutes. The baking soda helps improve the texture, making the shrimp more tender.
• Once thawed, drain the shrimp and pat them dry with a paper towel.
2. Marinate the Shrimp:
• Toss the shrimp with 1 tablespoon of olive oil and 2 tablespoons of Slap Ya Mama Cajun Seasoning. Make sure the shrimp are well-coated and let them marinate for at least 15 minutes (or longer if you have time).
3. Prepare the Skewers:
• Thread the marinated shrimp onto skewers, ensuring they are arranged evenly.
4. Cooking Options:
Option 1: Grilling
• Preheat your grill to medium-high heat (about 200-230°C).
• Place the shrimp skewers on the grill and cook for 2-3 minutes per side, until the shrimp are pink, opaque, and lightly charred.
• Remove from the grill and squeeze fresh lemon juice over the shrimp.
Option 2: Pan-Searing
• Heat 1 tablespoon of oil in a large skillet over medium-high heat.
• Once the oil is hot, add the shrimp (you may need to cook in batches to avoid overcrowding). Cook for 2-3 minutes per side, until the shrimp are pink, opaque, and slightly caramelized.
• Remove from the pan and squeeze fresh lemon juice over the shrimp.
5. Serve and Enjoy:
• Serve the Cajun shrimp skewers hot, with lemon wedges on the side for extra zest.
• Pairs well with grilled rice, grilled vegetables, and coleslaw.
