Easy & Delicious Ramen

Ramen is the perfect combination of comfort food with a generous helping of vegetables. Making ramen at home is great as you can choose your favourite ingredients while customizing the flavour to your preference. Here's a simple recipe for ramen with lemon shoyu tare – it’s light while still very filling, and very tasty. Adjust according to your taste and enjoy!

Ingredients:
- Vegetable broth
- Ramen noodles
- Tofu (firm, cubed)
- Bok choy (chopped)
- Carrots (julienned)
- Spring onions (sliced)
- Mushrooms (sliced)
- Lemon Shoyu Tare
- Optional:
   Boiled Egg with Black Sesame Seeds
   Umami Salt
   Low-Sodium Soy Sauce

 

Instructions:

In a pot, bring the vegetable broth to a simmer. 

Cut tofu into cubes and lightly sprinkle with corn flour. Over medium heat with a teaspoon of cooking oil, sauté tofu in a pan until golden brown. Set aside.

Cook ramen noodles according to package instructions. Drain and set aside.

In the same pan, lightly sauté bok choy, carrots, and mushrooms until tender. You can also skip this step and just leave the vegetables in the hot broth a little longer before eating if you prefer a crisp vegetable texture!

Add the lemon shoyu tare to the simmering broth 1 tablespoon at a time, adjusting the flavor to your liking. The lemon shoyu tare is lovely and light; if you are looking for a bit more depth you can add: 1 teaspoon Umami Salt, 1 tablespoon Soy Sauce – we recommend a low sodium version so that you add richness but not too much salt flavour.

Combine the vegetables with the simmering ramen broth.

Place a serving of cooked ramen noodles in each bowl. Ladle the hot broth and vegetables over the noodles.

Top with sautéed tofu and garnish with spring onions or sliced lemon if desired.

Serve immediately and enjoy your delicious vegetable ramen!

What is tare? Tare is a sauce used in Japanese cuisine, particularly in the context of ramen, though there are other uses as well such as marinades or for flavour in stir-fries. It is a concentrated flavoring component that enhances the overall taste of the ramen dish. Tare is typically added to the broth to provide depth, richness, and complexity. Without tare, there is no (good) ramen!
